Today I bring you the easiest and best bbq pork sandwich recipe. One thing this southern girl knows and that is good BBQ! During the summer we cook pork roasts on the pit all day and let me tell you, it is fall off the bone good. Neighbors come from all over just for a sample. My grandfather has a secret sauce recipe that tops the chart. (One day I am going to make him give me the recipe!) These pork sandwiches take me right to our summer picnic. In just an hour you can have your own BBQ Pork Sandwiches that will have everyone asking for seconds!
We have sales on boston butts ALL the time at Harris Teeter. This time I had the butcher cut one roast in two so that I could easily use the meat for other meals. If you have a large crowd you can certainly cook a whole roast just double up on the cooking time.
Ingredients
Boston Pork Roast (Roughly 4-5lbs)
1 Can Coca-Cola
1/2 cup brown sugar
1 Teaspoon Garlic Powder
1 Tablespoon Onion Powder
1 Tablespoon Salt Salt
Lay your roast out and coat in brown sugar, salt, garlic and onion powder.
Heat up a skillet f, and sear each side. This is totally optional but it sure adds to the flavor!
Now to the real cooking part. I cooked my BBQ in an electric pressure cooker. If you don’t have one DEFINITELY add it your wish list. It’s awesome and cuts the cooking time down. Place the meat inside and add a can of Coca-cola to the meat. Place the lid on and cook on HIGH under HIGH Pressure for 60 minutes.
If you don’t have an electric pressure cooker you can place it in the slow cooker on high for about 8 hours.
Once the meat is done it will be fall of the bone tender. Remove the meat from the juice and shred. The easiest way to shred the pork is with a pair of Meat Claws. The meat is tender and oh so sweet!
