This is my first Deals to Meals post in a while! We moved the week before Christmas and I am still not fully unpacked.. and the things I have unpacked I have forgotten where I put it. It took me three hours to find the pizza cutter the other day! So I’m still getting in the grove of my new kitchen, but it is definitely feeling more like home and I have a ton of kitchen cabinets and space which is always a good thing.
This week Harris Teeter has chicken leg quarters on sale for 29¢ a pound which is crazy! (Some areas may be 39¢). I grabbed this pack this morning and it only cost me $1.83.
I was planning on getting a bag of frozen vegetables (Birdseye is buy one get one FREE this week), but I found fresh green beans on the produce rack. (pssst. Head here for my tips for saving on fresh produce)
This chicken is seriously fail proof and always tastes amazing! In a casserole dish place your vegetables down on the bottom and place the chicken on top.
In a bowl combine these ingredients:
2 tablespoons olive oil
1 Stick Melted Butter
Juice from 1 Lemon
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
Pour over the top of the chicken. I always cut two more lemons and place them on the chicken to keep them moist and add more flavor. Preheat your oven to 350. Then bake at 350 for an hour. Chicken should be golden brown.
