It’s Monday, really my least favorite day of the week.. back to the daily grind, schedules, agendas etc. There is one bright part of the day and that is fall is here and so is Monday Night Football! Loaded Beef Nachos are on the menu tonight in my home. This weekend I snagged the Meal Deal as Harris Teeter. (I’ll use the tortillas later in the week). Don’t forget lean ground chuck is just $2.99/lb and there are SEVERAL brands of Tortilla Chips buy one get one FREE through 9/27.
1 pound of ground beef, cooked and drained
1 can of small red beans, rinsed and drained
8oz Ortega Taco Sauce
4oz Shredded Cheese
One large bag of tortilla chips
Toppings: (choose your own)
- Preheat oven to 350 degrees Fahrenheit.
- In a large pan, once beef has been cooked and drained, add beans and onions. Mix and heat over low for 2-3 more minutes, add taco sauce.
- To make nachos, place a layer of nachos on the bottom of an oven safe large platter or plate, add meat mixture, layer with cheese and continue process one more time. Place tray in oven for three minutes or until cheese melts.
- Remove from heat, let cool a few minutes and add desired toppings.
