Happy Easter Everyone! We spent the holiday with family and friends celebrating the Resurrection of Jesus. Our day was filled with a wonderful church service, and a huge dinner, followed by an Easter Egg Hunt for the kiddos. I made one of my families favorite side dishes and thought I would share.. Pineapple Casserole! There is NEVER any leftovers when I make this savory dish.. and this week I picked up Dole Pineapple for .50 cents a can, and had several bags of Sargento Cheese on hand from last week, oh and the Ritz Crackers deal.. it was almost a no brainer to add this to our dinner menu.. Here’s the recipe:
2 Cans Chunk Pineapple
1/3 Cup All Purpose Flour
1 Cup Sugar
1 1/2 Cup Ritz Cracker Crumbs
1 Stick of Butter
1 8oz Bag Shredded Sharp Cheddar Cheese
1/4 Cup Pineapple Juice (from can)
Mix Flour, Cheese, Sugar, and Drained Pineapple together.
Place in your Casserole Dish (I use 8X13)
Melt Butter, and mix in Pineapple Juice and Ritz. Spread Ritz mixture on top of the pineapple in the dish.
Bake on 350 for 20 to 30 minutes.
