Potatoes, cheese, and bacon it doesn’t get any better! And this casserole is seriously the most amazing combination of flavors. Last night I hosted my Mom, Dad, brothers and their families for a Mother’s Day dinner and this casserole didn’t disappoint. Bacon truly makes everything delicious! I whipped this creation up using my stockpile items. Last week we were able to get Simply Potatoes for just .64 cents a bag, I got discount bacon for .75 cents this week, and I have plenty of cheese from the last few weeks of deals. I grabbed the diced potatoes with onions although you could use the shredded hash browns instead. You’ll need two bags for this recipe.
First I cut up a pound of bacon and fried it in the skillet, I then took an 8 ounce container of sour cream and mixed it with 1/2 a packet of dry ranch salad dressing mix. (If you don’t have the dry mix on hand you can use 1/2 a container of sour cream and 1/2 cup of ranch dressing). Mix the potatoes, bacon, and ranch sour cream mix in a casserole dish. Top with shredded cheese (I used two cup mild cheddar). Bake at 350 for 35 minutes. This was a crowd pleasure for sure! Can’t wait to make it again. Here’s the Pinterest pin.
