I made a quick casserole for brunch today and it was a hit! It was more like lunch time by the time I got all my groceries in and the casserole cooked. But who cares? I could eat breakfast food any time of the day! I had bought quite a bit of sausage last week and this seemed like an easy way to put it to use. If you plan on buying the Betty Crocker AuGratin Potatoes you may want to give it a try!
Beat eggs and set aside.
Once Sausage is ground add water, milk, butter and cheese mix to sausage. In a casserole dish place the potatoes, add eggs, then top with sausage and cheese mixture. Bake at 450 for 25 minutes. The last minute of cooking add a cup of shredded cheese.
Allow the casserole to cool a few minutes before serving.
