I LOVE a good Italian Dish! Just this weekend I was craving pasta, and now that our favorite local Italian restaurant is out of business I had to take matters into my own hands! This has been a busy week and I didn’t pre-plan dinner so I ran to Harris Teeter to throw something together. Honestly it was refreshing to walk in without coupons and snag everything I needed for around 7 bucks! There are always deals to find at Harris Teeter! This is one of my kids favorite dinners. It’s quick, easy, and feeds a crowd.
1 Jar of Pasta Sauce (anything will do!)
1 Pack of Sliced Mozzarella
16oz Rigatoni Noodles
1/2 Cup Grated Parmesan Cheese (I found HT Traders on clearance a few weeks ago)
I had Parmesan Cheese and egg on hand so the other items cost around $7, may be closer to $10 if you need parmesan cheese.
First cook your beef and add your pasta sauce.
While your meat sauce is simmering, boil the Rigatoni noodles for 10 minutes. Next drain them, allow them to cool and toss them in one egg and 1/2 cup parmesan cheese.
Then you’ll need a Springform 9in Pan, greased on the bottom and sides. The tricky part is putting all the noodles in the pan standing up. Start in one corner and work your way out.
Once the noodles are in place the sauce on top. Then use a spoon and press the sauce so it goes down into the noodles. Finally add a pack of sliced Mozarella Cheese to the top.
Bake on 350 for 30 minutes.
Allow the pie to set for just a minute before releasing the springform pan.
