Nikki’s Easy Creamy Macaroni Salad Recipe

My grandmother was from Hawaii and I will never forget her Macaroni Salad. Hawaiians LOVE mac salad. It’s served quite often with plate lunches. It was so simple and sweet and always served with a side of pork and rice. When I went to Hawaii a few years back I had a side of macaroni salad and it took me right back to my childhood. Here’s my twist on macaroni salad. I make it several different ways, but this is my favorite.

Here’s what you need:

1 lb Macaroni Noodles
1 Medium Vidalia Onion
2 Peppers (I use one yellow and one orange)
2 cups Mayonnaise (Duke’s is my personal favorite)
2 Tbsp apple cider vinegar
3 Tbsp Sugar
1 tsp Garlic powder
1 tsp onion powder
2 Tbsp relish
1 tsp salt
1 tsp pepper
1/2 c milk

Instructions:

  • Boil your noodles according to the box. I prefer to boil mine a minute of two longer for macaroni salad.
  • Dice your peppers and onions.
  • In a large bowl mix mayo, vinegar, spices, and relish.
  • Once the noodles are cool incorporate them into the mayo mix, and add in the peppers and onions.

It’s best if you can put this in the fridge for a few hours before serving. Eat by itself or serve as a side with your favorite summer meals.

Easy Cucumber Salad Recipe {Deals to Meals}

When it is hot outside I crave cool salads. This one is my absolute favorite and it is SO very easy to make! It’s perfect paired with grilled chicken or to take to those summer picnics and cook out. Not only is it easy to make, but it uses just a few ingredients and when sealed and placed in the fridge the flavor just impacts with time. I hope you enjoy this creamy and dreamy salad as much as I do.

Here’s what you need:

2 Hot House Cucumbers (or three large regular ones)
1 Medium Vidalia Onion
1 cup Mayonnaise (Duke’s is my personal favorite)
2 Tbsp rice wine vinegar
2 Tbsp Sugar
1 Tbsp dill (fresh or from the spice jar)
1 tsp Garlic powder
1 tsp salt
1 tsp pepper

Instructions:

  • In a bowl mix all of the ingredients and incorporate them very well and set them aside.

  • Slice your cucumbers. I prefer mine on the thin side so I use my mandolin to get the perfect slice. You can also peel the cucumbers if you like the hot house cucumbers have really thin skin so I usually leave them on.
  • Next slice your onions thin and in smaller pieces.
  • Add the cucumbers and onion to the bowl with dressing. Toss well to coat all the the cucumbers and onions in the dressing. You can eat it right away or place in the fridge for a few hours for the flavors to combine well.
  • Eat within three days of making the salad, it can wilt fast.

To mix it up you can add some tomatoes or a different type of onions to change things up.

Egg Roll In a Bowl Recipe {Deals to Meals}

When I’ve had a long day and my husband and I both look at each other and ask ‘What’s for Dinner?’ the answer is usually Chinese takeout.

When we order take out I prefer just a couple of egg rolls, so this is one of my favorite Asian Meals to make at home, and very frugal!

All the ingredients combined cost me less than $10.00 this week at Harris Teeter! Not only is this meal frugal and full of flavor, it can be done and on the table in less than 15 minutes cook time.

Ingredients

  • 1 medium head of cabbage, cut into thin strips.
  • 4-5 carrots shredded
  • 1lb ground pork ( you can also do ground chicken, sausage, or beef)
  • 1 green onion
  • House of Tsang Stir Fry Sauce

Directions

  • Cut your cabbage into strips.
  • Shred 4-5 carrots (I use a shredder with a box attached to catch the carrots)
  • Cut 1-2 green onion
  • Brown your ground pork on medium in oil, I used HT Traders Sesame Oil that I had on hand, but you can use regular cooking or olive oil, whatever you have on hand. Ground pork is often lean so it needs a little oil to cook.
  • After the meat is done add your cabbage and saute until tender (usually five minutes).
  • Add in carrots and saute for a few more minutes.
  • Lastly, add in a little stir fry sauce. I really love the flavor of House of Tsang! Or you can use a little soy sauce. And throw the green onions on top.

That’s it! Serve in a bowl, and eat with a fork (or a pair of festive chopsticks if your feeling really authentic.)

Secret to the Best Grilled London Broil Recipe

London Broil

I really, really love when London Broil is on sale. This week’s deal is to good to pass up! Not only is the price AMAZING, but it feeds a crowd.

I know it can also be an intimidating piece of meat, and if your wondering what to do with it I have some fail proof tips that will help you make the best Grilled London Broil.

Score the meat. First you want to score your meat on both sides. (That’s just tiny diamond shape cuts throughout the meat on both sides.) It helps tenderize the meat and helps it cook evenly.

Marinade the meat. Honestly the longer the better (up to 24 hours), but it’s totally fine if you just have 30 minutes or so. I used Harris Teeter’s Marinade. They are the BEST! This was the Steak & Chop Marinade.

Let it rest. Let your meat sit out for 15 minutes before cooking so it is not extremely cold. This helps with even cooking.

Heat the grill. Make sure your grates are greased and bring the grill to medium heat.

Cook. Cook for nine minutes on one side, flip the meat and cook for nine minutes on the other side. I closed the grill left it cooking, took the kids out to the swing set, came back flipped the meat, and then made a quick salad. It literally cooks itself!

Let it rest (again). The most important part is to let it rest for 10 minutes before you cut it. That ensures all the juices are kept inside.

Cut & Serve. Make sure you have a sharp knife and you cut the meat at an angle. Keep the strips thin for the best presentation.

Secret Southern Pimento Cheese Recipe

Secret & Southern. Both qualities you’d expect in a dish made in your own kitchen. Tangy, creamy, yet balanced by that unmistakeable bite of cheddar, this Secret Southern Pimento Cheese will put a smile on your face and a serious dent in your appetite! My ‘Maw’ shared this recipe with me back when I was a kid and although I’ve made pimento cheese a ton of different ways over the years I always come back to this original.

I picked up Harris Teeter’s Shredded Cheese last week and was just waiting for the right time to make this.

Only 3 Ingredients


1 Bag Shredded Cheese (I prefer the Wisconsin Cheddar or Sharp Cheddar Harris Teeter Brands!)
1 cup Duke’s Mayonnaise (ok it doesn’t have to be Duke’s but really it does make the dish!)
2 oz of Pimentos, strained
*Salt and Pepper to taste if you’d like

All you need to do is put your ingredients in a bowl and mix them together. Serve on toast, bread, crackers, on a spoon, however you like! It really is best if it sits overnight.

Everyone is gonna want to know what store you bought it from. You don’t have to tell; It’s your little secret.
